Broccoli Soup. Made from the stalks you would normally throw away.
2-2 ½ Pounds of broccoli stalks, ensuring the woody tough ends and layers removed cut into small pieces around 1 inch in size.
I large potato around 8 oz cut into cubes
I medium chopped onion
2 large garlic cloves chopped ( I used 3 as I love Garlic )
2 tablespoons of olive oil, or large knob of butter
2 pints or around 6 cups of veggie stock
2 teaspoons of sea salt
Freshly ground pepper to taste
Chop the Broccoli stalks and remove woody sections and chop to small Inch pieces, chop potato into cubes.
Melt the olive oil or butter ( I used a little of each ) add the chopped onion and chopped garlic and sauté until the onions look clear over a slow heat.
Put in the Veggie stock, Broccoli, potato and seasoning to taste into the pan and bring to the boil then allow to simmer, partially cover with lid so you don’t lose any liquid until the stalks are tender. ( the recipe I followed recommended 20 mins, but I did them for longer until I could easily stab a fork into the stalks)
Bring off the heat, and use a Hand blender to blend the soup to a creamy consistency. And Serve…….
(( PLEASE BE VERY CAREFUL NOT TO BRING OUT THE BLENDER WHILE ON AS YOU COULD BE SPLASHED WITH HOT SOUP AND BURN YOURSELF.))
Serve immediately with a sprig of parsley. Buttered toast goes well with this, Veggie Mite goes well with this or Marmite, or a toasted cheese sandwich cut into thin slices. Delicious!
I made enough in two cooking sessions for 12 bowls of soup. The surplus I cooled in the fridge and then froze for later use.

This sounds super delicious! The broccoli stalks are actually my favorite part. Could care less about the fuzzy top…LOL. A wonderful new blog!

That’s all it does include, as we freeze the broccoli heads we can’t eat, And when I came across a recipe for using stalks and they contain all the goodness too, I had to try it out.. 🙂 Its Yummy.. 🙂
