Having a huge amount of Blackberries this year growing in our allotments behind our shed, I have picked and frozen many.. So imagine my joy when I came across this recipe ..
Blackberry and Apple Chutney
You will need
Ingredients:
Apples 1 Kilo of peeled cored and cubed cooking apples
Onions 300 grams thinly sliced
Knob of butter and a tbsp of olive oil
Sugar 275 grams of granulated
Balsamic Vinegar 150ml
Ground Cinnamon 2 teaspoons
Blackberries 300 grams
Black Pepper- ground added to taste.
Method
Sweat down the onions in a large pan on gentle heat with butter and little oil until soft
Add the Sugar and apples and balsamic viniger and cinnamon and a couple of turns of freshly ground black pepper and slowly bring to the boil..
Turn down heat and allow to simmer for about 35 mins as you allow liquid to reduce, so do not cover with a lid
Then add your Blackberries and cook for a further 10 to 15 minutes..
Allow to cool slightly and pour ( you will find the liquid has become slightly thicker ) into sterilized preserving jars …
Love to eat this on cheese with crackers, or with salads or on your favourite sandwich
MMMMouthwatering, thank you, Sue, for this open window to your garden. I really enjoy the view!
